I have a confession to make: I love cookies. I know some of you will always choose cupcakes, pastries, donuts, or some other sweet treat instead, but I have this undeniable love for cookies. More specifically, warm, just-out-of-the-oven cookies. Mouth-watering! So you can imagine my skepticism when I came across The Burlap Bag's recipe for 2-ingredient cookies using ripe bananas and oatmeal. How can they be that easy to make? I had to try it, and they are so delicious. Just the right amount of sweetness and chewiness.
They cover all areas, really. Breakfast, lunch, dessert... I would eat these any time of the day. And, bonus, they're healthy! I call them 'power' cookies because they're perfect to save for later and grab one on the go. Add in nuts, raisins, chocolate chips, cinnamon, or even almond butter for a little extra flavour. Just try not to devour the whole batch in one sitting ;) Have a sweet Wednesday! xo
Two ripe bananas
1 c. Whole grain oats
Handful raw almonds, chopped
+ Anything else you choose!
Add the oatmeal to the bananas in a large mixing bowl and mash until oats are coated. Mix in the almonds or any other add-ins that you wish. Scoop onto a lightly greased cookie sheet and bake for 15 minutes at 350 degrees. Makes about 15 delicious (and easy) cookies!
