feeling thankful


Just a short and sweet post to say happy American Thanksgiving! Being Canadian, of course we celebrated this holiday back in October, but I never realized just how exciting of a time it is here in the states! It feels so festive to watch the Macy's Thanksgiving Day Parade with a cup of coffee, spending the day cooking while listening to great music. We're preparing our very first turkey dinner tonight and it's go-time! I plan to document each dish (we're making such yummy recipes, that's for sure!) and it'll all be on the blog next week. So to all my readers, I am so thankful for all your support and belief in Discovering Elegance. It seriously means the world! And to my family in Canada, I miss you all and am so thankful for your continuous love. Happy Thanksgiving! xo

dots and denim


A cozy sweater and jeans has been my go-to lately, especially with chilly mornings and warm afternoons. I love layering with a collared shirt underneath a sweater, but I decided to tie my chambray around my waist for a double-denim look. It's been an interesting road adjusting to the weather (humid one day, super dry the next) here on the east coast, but I think I'm finally settling in. And one of my favourite things that is coming up soon is Thanksgiving! We're going to be making our first turkey dinner and I honestly can't wait. Mmm. I've been pinning all the inspiration I can to start preparing (somewhat) healthy Thanksgiving dishes. Crossing my fingers they'll turn out! Have a wonderful Thursday everyone. xo

I was so excited to hear that LOFT was finally making its way to Vancouver! I was lucky enough to spend a fabulous night at Chambar a few weeks ago to preview the upcoming holiday collection, and it is beyond amazing! I picked up this adorable tweed jacket and it was truly love at first sight. With subtle hints of gold and black piping, it is the perfect piece to transition into the holiday season. banana oatmeal power cookies


I have a confession to make: I love cookies. I know some of you will always choose cupcakes, pastries, donuts, or some other sweet treat instead, but I have this undeniable love for cookies. More specifically, warm, just-out-of-the-oven cookies. Mouth-watering! So you can imagine my skepticism when I came across The Burlap Bag's recipe for 2-ingredient cookies using ripe bananas and oatmeal. How can they be that easy to make? I had to try it, and they are so delicious. Just the right amount of sweetness and chewiness. 

They cover all areas, really. Breakfast, lunch, dessert... I would eat these any time of the day. And, bonus, they're healthy! I call them 'power' cookies because they're perfect to save for later and grab one on the go. Add in nuts, raisins, chocolate chips, cinnamon, or even almond butter for a little extra flavour. Just try not to devour the whole batch in one sitting ;) Have a sweet Wednesday! xo


Two ripe bananas
1 c. Whole grain oats
Handful raw almonds, chopped
+ Anything else you choose!

Add the oatmeal to the bananas in a large mixing bowl and mash until oats are coated. Mix in the almonds or any other add-ins that you wish. Scoop onto a lightly greased cookie sheet and bake for 15 minutes at 350 degrees. Makes about 15 delicious (and easy) cookies!

boyfriend jeans


I've been on the hunt for boyfriend jeans for a while now, but it has always been a challenge to find that perfect loose fit within my price range. I tried on this pair from Forever 21 and immediately fell in love! I've been wearing these jeans with flats for a relaxed look running errands, but they also go great with heels or booties for a night out. As well, I've been toting around this canvas bag c/o Isabel Marant pour H&M and it's been perfect for carrying everything from groceries to my everyday essentials.

coffee and cobalt


Although these photos were taken before I left for the east coast, we've been having endless days of sunshine mixed with overcast clouds, and it finally rained today. I never thought I would be happy to see rain, but it makes me feel right at home. This outfit was kind of thrown together last minute, playing with different textures and styling my liquid leggings. Pairing them with florals and a bright cable knit sweater was a fun way to dress them up without being too drastic for a coffee date with the boy. Now I'm sure you're getting tired of seeing these black booties from Muse Social Fashion House (serious repeat offender here, here and here) but they honestly are so comfortable and just go with everything. I can't stop wearing them! Hope you all have a wonderful Thursday (and embrace the rain!) xo

sweet & tangy spinach salad


So on a trip to Costco the other day, we picked up the biggest bag of spinach possible (merrily because it was so inexpensive) and now I have never-ending spinach at my disposal. To prevent myself from getting tired of this leafy green vegetable, I've been using it in a couple different recipes. The easiest? My take on a fresh spinach salad. Keeping a balance of sweet and savoury, this salad is a great option for lunch (with chicken or tofu for added protein) or used as a side supplement to dinner. The ingredients are simple yet delicious, and the vinaigrette is so easy to make yourself.

The best part about this salad is it is so simple to swap in and out different ingredients. Don't be afraid to use any kinds of berries, vegetables, cheese, nuts and seeds. But I always stick to my base of spinach and cooked quinoa (my love of quinoa does not end)! Enjoy and have a wonderful Tuesday everyone. xo


Salad:
2 c. Rinsed fresh spinach
3/4 c. Cooked quinoa (chilled)
1/2 c. Sliced strawberries
1/2 c. Sliced mushrooms
1/4 c. Diced avocado
2 tbsp. Crumbled feta cheese
Handful chopped raw almonds

Vinaigrette:
Mix all ingredients together to taste
Balsamic vinegar
Extra virgin olive oil
Dijon mustard
Cracked black pepper
Agave nectar

The recipe measurements are general, but I usually just go by feel with my salads. If you like extra veggies or maybe you want added sweetness, go for it! Have fun with your meals, it makes the end result so much more enjoyable. Happy eating!
