Today is International Waffle Day and I decided to whip up the easiest, quickest, most delicious vegan gluten-free waffles in the world. Okay, maybe not the world, but at least in Vancouver. Seriously these waffles are amazing. Five ingredients, two minutes. Done and done. Yes, I'm not kidding!
The texture is crisp on the outside, fluffy on the inside, and the oatmeal adds a bit of a crunch. They definitely have a different consistency than a batter that includes eggs, flour, and sugar. But, in all honesty, for a healthy, vegan, flourless waffle around 65 calories each, they are so, so good. Leftovers? Pop them in the toaster and they crisp up perfectly the next day. 1 c. Oatmeal
1 c. Almond milk
1 tbsp. Almond butter
Cinnamon to taste
Throw everything into a bowl, and blend! Pour into your heated waffle iron. Makes about 5 waffles. I served mine with a drizzle of agave nectar topped with sliced bananas and blueberries.
